Wagyu is the name of Japanese origin cattle. This has the famous frost-effect fat which helps to produce a tender, tasty, and juicy meat.
Kokusan-gyu is the name of cattle which is not Wagyu, but raised in Japan. The meat is not as tender as Wagyu, but leaner and has a lower price.
One portion of meat is approx. 80g.
